Before starting, preheat the oven to 450ºF. Wash and dry all produce. Peel, halve, then cut onion into 1/8-inch slices.Add onions, vinegar, 4 tbsp water and 1 tbsp sugar to a small pot. Season with 1/2 tsp salt. Bring to a simmer over medium-high heat. Cook, stirring often, until sugar dissolves, 1-2 min. Remove the pot from heat. Transfer onions, including pickling liquid, to a medium bowl. Place in the fridge to cool, 15 min.
Arrange bacon strips in a single layer on a parchment-lined baking sheet. Bake bacon in the top of the oven until crispy and cooked through, 8-12 min.** Transfer to a paper-towel lined plate. Meanwhile, core, then cut apple into 1/2-inch slices.Cut tomato into 1/4-inch-rounds, then season with salt and pepper.Thinly slice chives.Pat eggs dry with paper towel, then thinly slice. Season eggs with salt and pepper.
Combine cream cheese, sour cream, half the chives and Dill-Garlic Spice Blend in a medium serving bowl. Season with salt and pepper, then stir until smooth and combined. Sprinkle remaining chives over top.Halves bagels, then toast for 2-3 min until golden-brown.
Place herby cream cheese on one corner of a large platter or board.Place pickled onions in a small serving bowl on the opposite corner.Place eggs and toasted bagels in the middle of the board.Arrange tomatoes in a slightly overlapping layer, next to herby cream cheese. (TIP: We like layering in an arc shape.) Place bacon alongside.Fill in remaining gaps on the board with apple slices and grapes.
