Buffalo Chicken Meatballs

Serves 4 | with Tangy Ranch Dip

It's your favourite pub grub, in meatball form! These savoury mini meatballs are packed with flavour, tossed in a spicy Buffalo-style sauce and topped with fresh herbs. Tangy ranch dressing makes for a deliciously cool dipping sauce.

Cooking Steps

Prep

  • Roughly chop cilantro. 
  • Thinly slice green onions, keeping the white and green parts separate.
  • Peel, then mince or grate garlic.
  • To a small bowl, add ranch dressing and half the green onion greens, then stir to combine.
Form meatballs

  • In a medium bowl, combine chicken, breadcrumbs, half the cilantro, green onion whites, garlic, 1/4 tsp salt and 1/4 tsp pepper. (TIP: If you prefer firmer meatballs, add an egg to the mixture!)
  • Roll mixture into 14 equal-sized meatballs.
Cook meatballs

  • Heat a large non-stick pan over medium. 
  • When hot, add 1 tbsp oil, then meatballs. Cook 6-8 min, turning meatballs often, until browned all over and cooked through.**
  • Remove from heat, then add hot sauce and 1 tbsp butter.
  • Toss meatballs gently for 1 min, until sauce thickens slightly and meatballs are coated.
Finish and serve

  • Transfer meatballs to a serving dish. Spoon any remaining sauce from the pan over top.
  • Sprinkle with remaining cilantro and green onion greens.
  • Serve warm, with ranch mixture alongside for dipping.
