Hearty salmon is brushed with a zippy mix of mustards and garlic and topped with a golden breadcrumb crust. This roasted fish will shine as the centrepiece of your holiday dinner!

Roughly chop remaining 2 tbsp parsley. Add 2 tbsp butter to a medium pot. Melt over medium heat, stirring occasionally, 1 min. Add panko and cook, stirring often, until lightly golden, 1-3 min. Remove pot from heat, then stir in parsley. Set aside. Stir together Dijon, 1 tbsp whole grain mustard and 1 tbsp garlic puree in a small bowl.
Pat salmon dry with paper towels. Place on a parchment-lined baking sheet. Season with pepper and 3/4 tsp salt. Spread Dijon mixture onto top of salmon. Sprinkle panko mixture over top, pressing gently to adhere.
Roast salmon in the bottom of the oven until panko is golden-brown and salmon is cooked through, 22-25 min.**
When ready to serve, transfer salmon to a serving platter.
