  • Rough chop the broccoli into bite-sized pieces.
  • Core apple. Coarsely grate half the apple. Cut remaining apple into 1/4-inch pieces.
  • Transfer grated apple to a strainer. Using your hands, squeeze out any liquid. Set aside.
  • Add vinegar, half the mayo and 1/2 tsp (1 tsp) sugar to a large bowl. Season with salt and pepper, then whisk to combine.
  • Add diced apple to the bowl with dressing, then stir to combine.
  • Combine remaining mayo and half the mustard in a small bowl.

  • Add broccoli and 1 tbsp (2 tbsp) oil to an unlined baking sheet. Season with salt and pepper, then toss to coat.
  • Roast broccoli in the middle of the oven until golden-brown and tender, 8-10 min.

  • Meanwhile, add turkey, Panko, BBQ Seasoning, grated apple, remaining mustard and 1/8 tsp (1/4 tsp) salt to a medium bowl. Season with pepper, then combine.
  • Form turkey mixture into two 4-inch-wide patties (4 patties for 4 ppl). (NOTE: Your mixture may look wet; this is normal. In step 4, you can carefully re-shape patties when cooking.)

  • Heat a large non-stick pan over medium-high heat.
  • When hot, add 1/2 tbsp (1 tbsp) oil, then patties. Pan-fry until cooked through, 4-5 min per side.**
  • Transfer patties to a plate, then cover to keep warm.

  • Meanwhile, halve buns, then spread 2 tbsp (4 tbsp) softened butter on cut sides. Season with salt.
  • Arrange buns on another unlined baking sheet, cut-side up.
  • Toast in the top of the oven until lightly-golden, 3-4 min. (TIP: Keep an eye on buns so that they don't burn!)

  • Add broccoli and half the seed blend to the bowl with dressing and apples (from step 2). Toss to coat.
  • Spread mustard-mayo on buns. Stack patties on bottom buns. Close with top buns.
  • Divide burgers and broccoli salad between plates.
  • Sprinkle remaining seed blend over salad.
