Instructions

PREP

Wash and dry all produce.* Core, then finely chop peppers. Roughly chop cilantro. Zest, then juice the lime. Quarter tomatoes. Drain and rinse beans. Peel, then mince or grate garlic.

START FILLING

Heat a large non-stick pan over medium-high heat. When the pan is hot, add 1 tbsp oil (dbl for 4 ppl) then onions. Cook, stirring occasionally, until soften, 3-4 min. Add Beyond Meat, garlic and Mexican seasoning. Cook, breaking up Beyond Meat into smaller pieces, until crispy, 4-5 min. (TIP: Cook to a min. internal temp. of 71°C/160°F.**)

FINISH FILLING

To the Beyond Meat, add beans. Cook, stirring often, until warmed through, 2-3 min. Season with salt and pepper. Set aside.

MAKE SALSA & CREMA

While Beyond Meat cooks, in a medium bowl, combine peppers, tomatoes, lime juice, cilantro and 1 tbsp oil (dbl for 4 ppl). Season with salt and pepper. In a small bowl, stir together sour cream and lime zest. Season with salt and pepper.

WARM TORTILLAS

Wrap tortillas in paper towels. Microwave, until tortillas are warm and flexible, 30 sec - 1 min.

FINISH AND SERVE

Divide Beyond Meat and bean mixture between tortillas. Top with crema and salsa. Divide tacos between plates.
