Instructions

  • Heat a large pot over medium-high. When hot, add 1 tbsp (2 tbsp) oil, then sausage.
  • Cook, breaking up pork into smaller pieces, until no pink remains, 4-5 min.**
  • Using a slotted spoon, transfer sausage to a paper towel lined plate.

  • Drain and rinse corn.
  • Core, then cut pepper into 1/4 inch pieces.
  • Add Cajun Spice Blend, onions, peppers, garlic puree, tomato sauce base and rice to the pot. Cook, stirring constantly, until fragrant, 1-2 min.

  • To the same pot (from step 1),  corn, broth concentrate, and 1 cup (2 cup) water.
  • Stir, cover and bring to a boil over high heat.
  • Using a strainer, rinse rice until water runs clear.
  • Once boiling, add rice, then reduce heat to low.
  • Cover and cook until rice is tender and liquid is absorbed, 12-14 min.

Meanwhile, thinly slice green onions.

  • Fluff rice with a fork, then season with salt and pepper, if desired.
  • Stir in sausage and half the green onions.
  • Divide sausage and rice skillet between plates.
  • Drizzle over hot sauce, if desired.
  • Sprinkle over remaining green onions.
