We all know the importance of gravy, and this one won't let you down! This beef gravy uses the roast's savoury drippings and a hint of butter to yield maximum flavour.

Before starting, wash and dry all produce. While roast is resting, carefully skim beef fat from the roasting pan with a spoon and transfer to a small bowl. Reserve any drippings in the pan. Add 1/2 cup water to the pan. Stir, scraping up any brown bits from the bottom of the pan. (TIP: These brown bits give the gravy its flavour!)
Heat a medium pot over medium-high heat. When hot, add 2 tbsp beef fat from the small bowl and 1 tbsp butter. Swirl the pot until butter is melted. Sprinkle Gravy Spice Blend into the pot. Whisk until combined, 15 sec.
Gradually whisk in 1 cup water, pan drippings, broth concentrates and Worcestershire sauce until smooth. Bring gravy to a simmer, whisking occasionally. Once simmering, reduce heat to medium-low. Cook, whisking often, until slightly thickened, 2-4 min. Remove the pot from heat. Season gravy with pepper, to taste. Carefully place a piece of plastic wrap on the surface of gravy. (TIP: Placing plastic on the surface of gravy prevents a skin from forming on top. If serving immediately, skip this step.) Cover to keep warm.
Before serving, pour gravy through a fine mesh strainer into a serving vessel. (TIP: If you don‘t mind having bits in your gravy, skip the straining!) Serve gravy alongside roast beef.
