Instructions

Prep and soak bread

  • Peel, core, then cut apple 1/2-inch pieces.
  • Peel, then grate ginger.
  • Cut buns into 1-inch pieces.
  • Grease an 8x8 baking dish with 1 tbsp softened butter.
  • Whisk together cream, eggs, cinnamon, ginger, 1/4 tsp salt and 2 tbsp brown sugar in a large bowl.
  • Add bun pieces and dried cranberries, then stir to coat bread with liquid.
  • Transfer bread mixture to the prepared baking dish.
Cook apples and make pecan topping

  • Heat a large non-stick pan over medium-high heat.
  • When hot, add 2 tbsp butter, then swirl the pan until melted.
  • Add apples. Cook, stirring occasionally, until tender-crisp, 3-5 min.
  • Meanwhile, melt 2 tbsp butter in another small pan over low heat, or in a microwavable bowl. 
  • Combine pecans, 2 tbsp flour, remaining brown sugar, melted butter and 1/8 tsp salt in a small bowl.
  • Scatter apples over bread mixture.
  • Sprinkle pecan topping over top.
  • Cover baking dish with foil and bake in the middle of the oven for 30 min.
  • Carefully remove foil, then continue to bake until top is golden-brown,10-15 min.
Bake bacon

  • Meanwhile, arrange bacon on a parchment-lined baking sheet.
  • Bake in the bottom of the oven until crispy and cooked through, 16-18 min.**
  • Using tongs, transfer bacon to a paper towel-lined plate. Set aside.
Finish and serve

  • Allow cranberry-apple french toast bake to cool on a wire rack for 3-5 min before serving.
  • Divide french toast bake between plates, then drizzle maple syrup over top.
  • Serve bacon alongside.
