Instructions

  • Peel, then cut potatoes into 1-inch pieces.
  • Add potatoes, 2 tsp salt and enough water to cover (by approx. 1 inch) to a large pot (use same for 4 ppl). Cover and bring to a boil over high heat.
  • Once boiling, reduce heat to medium-high. Simmer uncovered until fork-tender, 10-12 min.
  • Drain and return potatoes to the same pot, off heat. Mash 2 tbsp (4 tbsp) butter into potatoes until creamy. Season with salt and pepper, to taste.

  • Line a baking sheet with parchment paper.
  • Cut zucchini into 1/4-inch rounds.
  • Add zucchini, 1/2 tbsp (1 tbsp) oil and half the Parmesan to prepared baking sheet. Season with salt and pepper, then toss to coat.(Should zucchini be seasoned and then parm sprinked overtop???
  • Arrange zucchini in singe layer. Roast in the bottom of the oven, flipping halfway until tender and golden-brown, 14-18 min.

  • Peel, then cut shallot into 1/2-inch pieces.
  • Roughly chop spinach.

  • Heat a large non-stick pan over medium-high heat.
  • While pan heats, pat chicken dry with paper towels. Add chicken and 1/2 tbsp (1 tbsp) oil. Season with salt and pepper, then toss to coat. Sprinkle over Cream Sauce Spice Blend. Using your hands, press Cream Sauce Spice Blend into sea bass pieces to coat completely.
  • When hot, add 1 tbsp (2tbsp) oil, then chicken. Cook, flipping halfway until chicken is golden-brown and cooked through, 4-5 min.
  • Transfer chicken to a plate.

  • Reheat the same pan over medium.
  • When hot, add 1 tbsp (2 tbsp) butter. Swirl pan until melted 30 sec. Add shallot, cook, stirring often and golden brown, 2-3 min.
  • Sprinkle over Cream Sauce Spice Blend, then sti to coat.
  • Add cream cheese, chicken as well as any chicken juices from the plate, 1 cup (2 cup) water. Cook, stirring often until sauce is smooth and chicken has cooked though, 2-3 min.**

  • Add spinach to pan with chicken. Season with salt and pepper, then stir until spinach wilts.
  • Drain and return potatoes to the same pot, off heat. Mash remining? Parmesan and 2 tbsp (4 tbsp) butter into potatoes until creamy. Season with salt and pepper, to taste.
  • Divide mash, and zucchini between plates.
  • Top mash with chicken and sauce from the pan.
