  • Add 10 cups hot water and 2 tsp salt to a large pot (use same for 4 ppl). Cover and bring to a boil over high heat.
  • Meanwhile, peel, then cut shallot into 1/8-inch slices.
  • Trim snow peas.
  • Quarter mushrooms.
  • Pull stems off mushroom caps [and discard].Cut mushroom caps and stems into 1/4-inch-thick slices.

  • Add mushrooms, ___ tbsp vegetarian oyster sauce, 1 tbsp (2 tbsp) oil to an unlined baking sheet. Season with salt and pepper, then toss to coat.
  • Roast in the middle of the oven, stirring halfway until tender and golden brown, 12-14 min.

  • Add linguine / chow mien noodles to the boiling water. Cook uncovered, stirring occasionally, until tender, 10-12 min.
  • Reserve 1/4 cup (1/2 cup) pasta water, then drain and return ____ to the same pot, off heat.

  • Meanwhile, heat a large non-stick pan over medium heat.
  • When hot, add 1 tbsp (2 tbsp) butter, swirling pan until melted, 30 sec.
  • Add shallots. Cook, stirring often until softened and golden, 3-4 min.

  • Add snow peas. Stir to combine.
  • Sprinkle cream sauce spice blend, remaining oyster sauce and remaining miso concentrate, then stir to coat.
  • Slowly add in _____ cup (__cup) water.
  • Cook, stirring occasionally/ often until smooth and lightly thickened, ___-___ min.

  • Reserve 1/4 cup (1/2 cup) pasta water, then drain.
  • Add linguine/ chow mien and half the mushrooms to pan with sauce.
  • Season with salt and pepper? Stir to coat. (TIP: For a lighter sauce consistency, add reserved pasta water, 1-2 tbsp at a time, if desired.)
  • Divide noodles between bowls. Top with remaining mushrooms. Sprinkle crispy shallots overtop.
