Prep

Before starting, preheat the oven to 425°F. Wash and dry all produce. Lightly grease an 8x8-inch baking dish with 1 tsp oil. Set aside. Add cream and maple syrup to a large bowl. Using a whisk or electric mixer, beat until stiff peaks form, 2-3 min. (NOTE: 1-2 min with an electric mixer on high.) Place in the fridge. Peel, core, then cut apples into 1/2-inch pieces.

Make filling

Add apples, cranberries, white sugar and 3 tbsp flour to another large bowl. Toss until well-combined. Set aside.

Make oat-almond crumble

Add butter to a medium microwavable bowl. Melt in the microwave, 1 min. (NOTE: If you don't have a microwave, melt butter in a small pot over medium-low heat.)Add remaining flour, brown sugar, Pumpkin Pie Spice Mix, oats, almonds and 1/4 tsp salt to the bowl with melted butter. Stir until well-combined.

Assemble crisp

Transfer filling to the prepared baking dish, then smooth into an even layer. Sprinkle crumble over top.

Finish and feast

Bake crisp in the top of the oven until filling is tender and crumble is golden-brown, 40-45 min. Set aside to cool for 10 min. Before serving, return crisp to the oven for 15 min until warmed through or serve at room temperature. Transfer maple Chantilly cream to a serving dish to go alongside. (TIP: Give cream a quick whip before serving, if needed!)
