Cooking Steps

  • Before starting, bring a large pot of salted water to a boil (use same for 4 servings). 
  • Wash and dry all produce.
  • To the boiling water, add spaghetti. Cook for 12-13 min, until tender but still firm to the bite. Reserve 2 tbsp (4 tbsp) pasta water.
    Strain spaghetti, then return to the pot, off heat.

  • Meanwhile, heat a large non-stick pan over medium. 
  • When hot, add bacon. (NOTE: For 4 servings, cook bacon in batches.) Cook for 5-8 min, flipping occasionally, until crispy.** 
  • Remove the pan from heat. Using a slotted spoon, transfer bacon to a paper towel-lined cutting board. Set aside. 
  • Discard all but 1 tbsp (2 tbsp) bacon fat.

  • Meanwhile, thinly slice mushrooms mushrooms into 1/4-inch slices.
  • On a clean cutting board, cut bacon into 1/2-inch pieces.

  • Add mirepoix and mushroom to pan with remaining bacon fat. Cook 3-5 min, stirring occasionally, until beginning to soften. Season with salt and pepper. 
  • Add garlic puree. Cook 1 min, stirring constantly, until fragrant.

  • Add crushed tomatoes, reserved pasta water, pesto and 1/4 tsp (1/2 tsp) sugar.
  • Reduce heat to medium-low. Cook 3-4 min, until slightly thickened. 
  • Season with salt and pepper, to taste.

  • Add sauce, 1 tbsp (2 tbsp) butter and half the bacon to the pot with spaghetti, then stir to combine. 
  • Divide pasta between bowls. 
  • Top with remaining bacon, then sprinkle over Parm.
