Instructions

1
  • Drain, then thinly slice olives into 1/4-inch rounds.
  • Peel, then mince or grate garlic.
  • Halve cucumbers lengthwise, then cut crosswise into 1-inch spears.
  • Lightly oil wooden skewers.
2
  • Lightly oil a clean work surface.
  • On the work surface, divide dough in half. Use both hands to roll each piece of dough into a 24-inch-long rope.
  • Cut each rope into three 8-inch-long pieces. (NOTE: Don’t worry if dough pieces shrink when you cut them.) Re-roll each piece of dough into a 12-inch-long rope. (NOTE: If dough springs back when rolled, let it rest for an additional 5 min before continuing.)
  • Working with one skewer at a time, starting from the base of the skewer, twist one dough rope around the skewer until the entire skewer is covered. Repeat with remaining dough ropes and skewers.
  • Arrange prepared skewers on a parchment-lined baking sheet, 2 inches apart.

3
  • Place two olive slices side by side at one end of each skewer to form ‘eyes’, pressing to adhere.
  • Bake on the middle rack of the oven until lightly golden-brown, 10-12 min.
4
  • Add 1/4 tsp garlic and 2 tbsp butter to microwave-safe bowl. Season with salt and pepper, then stir to combine. Microwave until butter melts.
  • Transfer marinara sauce to a small bowl.
  • When earthworm rolls are done, brush with garlic butter, then sprinkle Parmesan over top.
  • Cool on a wire rack for 10 min.
  • Carefully removing wooden skewers from earthworms, then transfer to a plate.
  • Divide earthworm rolls and cucumbers between plates.
  • Serve marinara sauce and ranch dressing on the side for dipping.
