Instructions

Cook noodles and veggies

  • Add fusilli to the boiling water. Cook uncovered, stirring occasionally, 5 min.
  • Meanwhile, peel, then cut sweet potato into 1/4-inch pieces.
  • Add peas and sweet potatoes to the pot. Cook, without stirring, until peas, potato and fusilli are tender, 5-6 min.
Cook sauce

  • Meanwhile, heat a large non-stick pan over medium heat. When hot, add 2 tbsp butter, then onions. Cook, stirring often, until onions soften, 1-2 min.
  • Sprinkle flour and garlic salt over onions. Cook, stirring often, until onions are coated, 1 min.
  • Add cream. Increase heat to medium-high. Cook, stirring often, until sauce thickens, 2 min.
  • Remove the pan from the heat.
Finish and serve

  • Drain, then return noodles and veggies to the same pot, off heat.
  • Add both cheeses and cream sauce to the pot. Stir until cheese melts and noodles are coated.
  • Divide cheesy noodles between bowls.
