Cooking Steps

Prep

  • Core, then thinly slice pepper.
  • Core, then cut the apple into 1/2-inch slices.
Assemble pizza roll-ups

  • Spoon 1 tbsp marinara over each tortilla, then top with spinach and peppers.
  • Sprinkle cheese over top, then sprinkle with half the garlic salt.
  • Tightly roll each tortilla over filling. (TIP: Tuck in 2 sides of each tortilla before rolling to prevent the from filling spilling out in the pan!)
Cook pizza roll-ups

  • Heat a large non-stick pan over medium heat.
  • When hot, add 2 tsp oil, then 3 pizza roll-ups, seam-side down.
  • Reduce heat to medium-low, then cook for 3-4 min per side until tortillas are lightly golden-brown and cheese is melted.
  • Repeat with remaining pizza roll-ups.
Finish and serve

  • Serve pizza roll-ups with remaining marinara on the side for dipping.
  • Serve apple wedges alongside.
