Carb Smart Sweet Chili Pork Lettuce Wraps

These pork lettuce wraps pack a serious flavour punch thanks to the winning combination of vegetarian oyster sauce, sesame oil and sweet chili sauce. Crunchy, zippy marinated veggies and toasted sesame seeds make these the perfect handheld bites!

Instructions

Prep and marinate cucumbers

  • Thinly slice cucumber. 
  • Add vinegar, 1/2 tbsp sugar, a pinch of salt and half the sesame oil to a small bowl, then whisk to combine.
  • Add cucumbers and carrots, then stir to combine. Set aside in the fridge to marinate.
Toast sesame seeds

  • Heat a large non-stick pan over medium-high heat.
  • When hot, add sesame seeds to the dry pan. Toast, stirring often, until golden-brown, 3-4 min. (TIP: Keep your eye on them so they don't burn!)
  • Transfer to a plate.
Cook pork mixture

  • Reheat the same pan over medium-high heat. When hot, add remaining sesame oil, then pork. Cook, breaking up pork into smaller pieces, until no pink remains, 4-5 min.**
  • Reduce heat to medium then add sweet chili sauce, oyster sauce and 2 tbsp warm water. Season with pepper, then stir to combine.
Finish and serve

  • Meanwhile, remove and discard outer layer of iceberg lettuce. Halve lettuce, then separate 8 leaves from the head. Set aside. (NOTE: Use remaining lettuce for a future creation!)
  • Roughly chop cilantro.
  • Divide lettuce leaves between plates, then fill with pork mixture. Top with marinated cucumbers and carrots.
  • Sprinkle sesame seeds and cilantro over top.
