A variation on the Québec classic that's just as delicious and can be eaten first thing in the morning! With the original flavours of maple and brown sugar, we've added some spiced gala apples for a bit of added texture and warmth. Paired with a side of maple turkey sausages for a perfect cold weather brunch!

Cooking Steps

  • Before starting, preheat the oven to 425F
  • Grease the base and sides of a 9x13-inch baking dish with 1 tbsp butter.
  • Add cream to a medium pot. Bring to a simmer over high heat.
  • Once simmering, add brown sugar, maple syrup and 1/4 tsp salt. Reduce heat to medium-low. Cook, stirring often, until sauce thickens slightly, 3-4 min.
  • Remove the pot from heat and set aside to cool slightly.

  • Meanwhile, peel, core, then cut apples into 1/2-inch pieces. Add apples and cinnamon to a medium bowl, then toss to combine.
  • Add breakfast baking mix to a large bowl, then add 1 1/2 cup water. Whisk to combine. Add apples, then stir to combine.
  • Spread apple batter along the base of the prepared baking dish, then pour maple mixture over top. 
  • Bake in the middle of the oven for 23-28 min until deeply golden-brown and a toothpick inserted into the centre comes out clean.

  • Meanwhile, cut sausages at links.
  • Heat a large non-stick pan over medium heat. When hot, add 1 tbsp oil, then sausages. Cook flipping often for 14-16 min, until golden-brown and juices run clear when cut.

  • Remove baked apple pouding chomeur from the oven and set aside for 5-10 min to cool slightly.
  • Divide pouding chômeur and maple sausages between plates.
  • Spoon any maple sauce from the bottom of the baking dish over top.
