Instructions

  • Finely chop half the spinach.
  • Line a baking sheet with parchment paper.
  • Add pork, finely chopped spinach, half the garlic puree and half the Parmesan cheese to a large bowl. Season with salt and pepper, then combine.
  • Roll mixture into 8 equal-sized meatballs (16 for 4 ppl).

  • Arrange meatballs on the prepared baking sheet.
  • Roast in the middle of the oven until golden-brown and cooked through, 10-12 min.**

  • Meanwhile, heat a large non-stick pan over medium heat.
  • When hot, add 1/2 tbsp oil (dbl for 4 ppl), then mirepoix.
  • Cook, stirring occasionally, until veggies are tender-crisp, 4-5 min.
  • Season with salt and pepper.
  • Meanwhile, roughly chop remaining spinach.
  • Set aside.

  • Add crushed tomatoes and remaining garlic puree to the pan.
  • Cook, stirring occasionally, until sauce thickens slightly, 3-4 min.
  • Add roughly chopped spinach.
  • Cook, stirring occasionally, until wilted, 1-2 min.
  • Season with salt and pepper.

  • Meanwhile, add gnocchi to the boiling water. Cook, stirring occasionally, until tender, 2-3 min. (DQ: TIMING?)
  • Drain and return gnocchi to the same pot, off heat.

  • Add meatballs and sauce to the pot with the gnocchi, then stir to combine.
  • Season with salt and pepper, to taste.
  • Divide gnocchi and meatballs between bowls.
  • Sprinkle over remaining Parmesan cheese.
