Zest 1/4 tsp clementine rind, then juice clementines.

Cook cranberry sauce

Heat a small pot over high heat. When hot, add 1 tbsp butter, then cranberries, sugar, 1/4 cup water and clementine juice. Cook, stirring occasionally, until thick and bubbling, 8-9 min.

Finish and feast

Remove the pot from heat. Stir in clementine zest. Transfer cranberry sauce to a serving bowl. Set aside.
