Instructions

1
  • Peel, then cut onion into 1/4-inch pieces.
  • Core, then cut pepper into 1/2-inch pieces.
  • Core, then cut apple into 1/2-inch slices.
  • Whisk together vinegar, 1/2 tsp sugar and 1 tbsp oil (dbl both for 4 ppl) in a large bowl. Add apple slices and stir to coat. Set aside. Season with salt and pepper, to taste, then stir to combine.
2
  • Heat a large non-stick pan over medium-high heat.
  • When hot, add 1/2 tbsp oil (dbl for 4 ppl), then onions, peppers and beef and pork mix. Cook, breaking up beef and pork into smaller pieces, until no pink remains, 4-5 min.**
3
  • Add brown sugar, Worcestershire sauce, tomato sauce base and 1/4 cup water (dbl for 4 ppl) to the same pan. Cook, stirring occasionally until sauce thickens slightly, 2-3 min. Season with salt and pepper, to taste, then stir to combine.
4
  • Meanwhile, wrap tortillas in paper towels. (NOTE: For 4 ppl, create two stacks with 6 tortillas in each stack.)
  • Microwave until tortillas are warm and flexible, 1 min. (NOTE: You can skip this step if you don't want to warm tortillas!)
5
  • Add spinach and tomatoes to the large bowl with the dressing and apples (from step 1). Season with salt and pepper, then toss to combine.
6
  • Divide beef and pork mixture between tortillas then top with cheese.
  • Serve with salad on the side.
