  • Core, then cut apple into 1/4-inch pieces.
  • Add half the mustard, 1/2 tsp (1 tsp sugar, 1/2 tbsp (1 tbsp) oil to a small bowl. Season with salt and pepper, then whisk to combine. (TIP: This is to glaze your chicken!)

  • Heat a large non-stick pan over medium heat.
  • When hot, add seed blend to the dry pan. Toast, stirring often, until golden-brown, 4-5 min. (TIP: Keep your eye on them so they don't burn!)
  • Transfer seed blend to a plate.

  • Increase the heat to medium-high.
  • When hot, add 1/2 tbsp (1 tbsp) oil, then chicken. (NOTE: Don't overcrowd the pan; cook chicken in 2 batches if needed.)
  • Cook until golden, 1-2 min per side.
  • Transfer chicken to an unlined baking sheet.
  • Bake in the middle of the oven until chicken is cooked through, 10-12 min.** Season with pepper and half the garlic salt (use all for 4 ppl).

  • Add vinegar, remaining mustard, 1/2 tsp (1 tsp) sugar and 1 tbsp (2 tbsp) oil to a large bowl. Season with salt and pepper, then whisk to combine.

  • Thinly slice chicken.
  • Add apples, arugula-spinach mix to the bowl with dressing (from step 4), then toss to coat.
  • Divide salad between plates. Top with chicken.
  • Sprinkle feta, seed blend and crispy shallots on top.
