These speedy tacos come together in a snap! Cook up chorizo with peppers, pre-chopped onions and Mexican Seasoning to fill each bite with bold flavour.

Cooking Steps

Prep

  • Core, then cut peppers into small pieces. 
Cook beef and veggies

  • Heat a large non-stick pan over medium-high heat.
  • When hot, add 1/2 tbsp (1 tbsp) oil, then beef, onions and peppers. Cook, breaking up beef into smaller pieces, until no pink remains, 4-5 min.**
  • Stir in Mexican Seasoning. Remove from heat. Cover to keep warm. 
Cook eggs

  • Meanwhile, add eggs and 1/4 cup (1/2 cup) milk to a medium bowl. Season with salt and pepper, then whisk to combine. 
  • Heat a medium non-stick pan over medium heat. 
  • When hot, add 1 tbsp (2 tbsp) butter, then egg mixture. Cook, stirring often with a spatula, until eggs are fluffy and cooked through, 2-4 min.**
Heat tortillas

  • Just before serving, wrap tortillas in paper towels. Microwave until tortillas are warm and flexible, 30 sec-1 min.
Finish and serve

  • Divide tortillas between plates, then top with beef mixture, eggs, chipotle sauce and feta. 
  • Tear cilantro over top.

If you've opted to get beef, cook in the same way the recipe instructs you to cook the chorizo.** Remove and discard excess fat, if desired.
