Instructions

Bake croutons

  • Cut ciabatta into 1-inch pieces.
  • Peel, then mince or grate garlic.
  • Whisk together garlic and 1 tbsp oil in a large bowl. Season with salt and pepper.
  • Add ciabatta, then and stir to coat.
  • Arrange ciabatta on an unlined baking sheet. Toast in the middle of the oven, stirring halfway through, until lightly golden, 4-5 min. (TIP: Keep an eye on them so they don't burn!)
Cook bacon

  • Meanwhile, cut bacon into 1/4-inch pieces. (TIP: Use kitchen shears to cut bacon with ease!)
  • Heat a large non-stick pan over medium heat.
  • When hot, add bacon. Cook, flipping occasionally, until crispy, 5-7 min.**
  • Remove from heat. Using a slotted spoon, transfer bacon to a paper towel-lined plate. Set aside.
Make Caesar salad

  • Zest, then juice half the lemon. Cut remaining lemon into wedges.
  • Add half the Caesar dressing, 2 tsp lemon juice, 1/2 tsp lemon zest and 1/4 tsp sugar to the same large bowl (from step 1). Season with salt and pepper, then whisk to combine.
  • Add kale, then stir to combine.
  • Add spinach, croutons, bacon and half the Parmesan, then toss to combine. (NOTE: If you prefer your salad well-dressed, use remaining Caesar dressing.)
Finish and serve

  • Divide Caesar salad between plates.
  • Sprinkle with remaining Parmesan.
  • Squeeze a lemon wedge over top, if desired.
