Before starting, preheat the oven to 475°F.Remove pizza dough from fridge to come to room temperature in a warm spot, about 40 mins before starting. Add 6 cups water and baking soda to a large pot. Bring to a boil over high heat. While water comes to a boil, lightly oil a clean work surface. Divide dough into 4 pieces. Use both hands to roll each piece of dough into a 12-inch-long rope. Cut each rope into 6 pieces. (NOTE: Don't worry if dough shrinks when cut into pieces.)
Line a baking sheet with parchment. Add half the pretzel bites to the boiling water and cook for 30 sec. Using a slotted spoon, gently remove pretzel bites, letting any excess liquid drip off, then place on the prepared baking sheet. Repeat with remaining pretzel bites. Bake in the middle of the oven until golden brown, 10-12 min.
Meanwhile, add sugar, cinnamon and 1/8 tsp salt to a large bowl, then whisk to combine. Melt 2 tbsp butter in the microwave. When pretzel bites are done, remove from the oven. Drizzle butter over pretzel bites, directly on the baking sheet, then toss to coat.Drop one pretzel bite at a time into the bowl with the cinnamon sugar mixture, then toss to coat. Transfer to a serving plate. Repeat with remaining pretzel bites.
Combine cream cheese, icing sugar and 1 tbsp milk in a medium bowl, then beat with an electric hand mixer or spatula until combined. Transfer cream cheese dip to a serving bowl.Serve warm cinnamon sugar pretzel bites with cream cheese dip on the side. (NOTE: Pretzel bites are best enjoyed when warm, the day they're made. Leftovers can be reheated in the microwave, if desired, but this may affect their taste and texture.)
