Instructions

Prep and bake crostini

  • Core, then cut pepper into 1/4-inch pieces.
  • Cut baguette into 1/2-inch slices.
  • Add baguette slices to an unlined baking sheet. Drizzle 1 1/2 tbsp oil over top. Season with salt and pepper, then toss to coat.
  • Bake in the middle of the oven until lightly golden-brown, 5-6 min.
Cook peppers

  • Heat a large non-stick pan over medium-high heat.
  • When hot, add 1 tbsp oil, then peppers. Season with salt and pepper. Cook, stirring often, until tender-crisp, 3-4 min.
  • Transfer peppers to a small bowl to cool.
Make goat cheese spread

  • Meanwhile, combine goat cheese, cream cheese, 1/8 tsp salt and 1/8 tsp pepper in a medium bowl.
  • Evenly divide goat cheese mixture between toasted crostini. (NOTE: Careful as the crostini will be hot).
  • Return crostini to the middle of the oven and bake until goat cheese mixture is warmed through, 2-3 min.
Finish and serve

  • Combine half the pepper and sweet chili sauce in a small bowl.
  • Divide red pepper jelly mixture over each crostini.
  • Sprinkle remaining pepper over top.
