Instructions

  • Peel, then cut potatoes into 1-inch pieces.
  • Add potatoes, 2 tsp salt and enough water to cover (by approx. 1 inch) to a large pot (use same for 4 ppl).
  • Cover and bring to a boil over high heat.
  • Once boiling, reduce heat to medium-high. Simmer uncovered until fork-tender, 10-12 min.
  • Drain and return potatoes to the same pot, off heat. Mash 2 tbsp butter (dbl for 4 ppl) into potatoes until creamy. Season with salt and pepper, to taste.

  • Meanwhile, trim ends off broccolini, then cut any larger stalks in half lengthwise, leaving thinner stalks whole.
  • Thinly slice green onions.
  • Add bison, breadcrumbs, half the green onion, 1/2 tsp garlic salt and 1/4 tsp pepper to a large bowl. Crack the egg into the bowl.
  • Mix well to combine.

  • Divide bison mixture in half (divide into four for 4 ppl) and form each portion into 1-inch thick ovals. Wrap each oval in bacon.
  • Spread BBQ sauce over tops of meatloaves.
  • Bake in top of the oven until cooked through, 12-14 min.**

  • Add broccolini, 1/4 tsp garlic salt and 1 tbsp oil (dbl both for 4 ppl) to an unlined baking sheet. Season with pepper, then toss to combine.
  • Roast in the top of the oven, flipping halfway through, until tender-crisp, 8-10 min. (TIP: Broccolini can burn quickly, so keep an eye on it!)

  • Meanwhile, add 1/4 cup milk, 2 tbsp butter (dbl both for 4 ppl) and remaining green onions to a small pot.
  • Heat the pot over medium heat, stirring occasionally, until butter melts.
  • Once potatoes are tender, pour milk-onion mixture over potatoes and mash until creamy.
  • Season with salt and pepper, to taste.

  • Divide bacon-wrapped meatloaves, mashed potatoes and broccolini between plates.
