Cooking Steps

  • Using a strainer, drain and rinse black beans.
  • Thinly slice scallions, keeping white and green parts separate.
  • Thinly slice radishes.
  • Cut pineapple into 1/4-inch pieces.

  • Add black beans to a large bowl. Using a fork, lightly mash half of the black beans until they just burst.
  • Add pineapple, radish, green onion whites, half the vinegar, 1 tbsp oil, and 1/2 tsp sugar (dbl both for 4 ppl). Season with salt and pepper, then stir to coat.

  • Add cabbage coleslaw mix, mayo, remaining vinegar and 1/4 tsp sugar to a medium bowl. Season with salt and pepper, then toss to coat.

  • Pat tofu dry with paper towels, then cut into 1/4-inch pieces. Season with salt and pepper.
  • Heat a large non-stick pan over medium-high heat.
  • When hot, add 1 tbsp oil / butter then tofu. Cook, stirring often, until tofu is golden-brown all over, 3-4 min.
  • Add jerk sauce and half the bbq sauce (use all for 4 ppl). Cook, stirring occasionally until fragrant, 30 sec.

  • Arrange tortillas on a clean surface.
  • Divide coleslaw and jerk tofu between tortillas. Sprinkle remaining green onions overtop.
  • Divide wraps and salad between plates.
