Tender root veggie mash topped with a super savoury turkey and gravy is a beautiful thing. All the flavours of a roasted dinner in a fraction of the time.

Cooking Steps

Boil root veggies

  • Peel, then cut sweet potato into 1-inch pieces.
  • To a large pot, add squash, sweet potato, 1 tsp salt and enough water to cover (by approx. 1-2 inches). Cover and bring to a boil over high heat.
  • Once boiling, reduce heat to medium-high. Simmer uncovered until veggies are fork-tender, 9-11 min.
Cook turkey

  • Meanwhile, heat a large oven-proof pan over medium heat. 
  • When hot, add turkey and soy sauce to dry pan. Cook, breaking up turkey into smaller pieces, until no pink remains, 4-5 min.** Season with salt and pepper.  
  • Transfer to a plate.
Cook veggies

  • Add 1 tbsp (2 tbsp) butter to the same pan, then swirl to melt. 
  • Add mirepoix and peas. Cook, stirring occasionally, until tender, 3-4 min. Season with salt and pepper.
  • Meanwhile, peel, then mince or grate garlic. 
Make gravy

  • Return turkey to the pan with veggies. Add Cream Sauce Spice Blend and garlic. Cook, stirring often, until fragrant, 30 sec. 
  • Add stock concentrate and 3/4 cup (1 1/2 cup water). Bring to a boil over high heat. Once boiling, reduce heat to medium. Cook, stirring occasioanlly, until thickened slightly, 2-4 min. 
Mash veg and broil

  • Once tender, drain and return veggies to the same pot, off heat. Mash 1 tbsp (2 tbsp) butter until smooth. Season with salt and pepper, to taste.
  • Roughly chop parsley.
Finish and serve

  • Divide root veg mash between bowls. 
  • Top with turkey mixture. 
  • Sprinkle over parsley.

If you've opted to get turkey, cook in the same way the recipe instructs you to cook the beef.** Disregard instrustions to drain discard excess fat.
