Cooking Steps

  • Peel, then finely chop shallot
  • Core, then cut pepper into 1/2-inch pieces.
  • Halve zucchini, lengthwise. Cut into 1/2-inch half moons.
  • Roughly chop spinach.

  • To a large parchment-lined baking sheet, add peppers, zucchini and 1 tbsp (2 tbsp) oil. Season with half the Lemon-Pepper Seasoning, salt and pepper, then toss to combine.
  • Roast in the middle of the oven for 15-17 min, stirring halfway through, until tender.

  • Meanwhile, heat a medium pot over medium. When hot, add 1 tbsp (2 tbsp) butter, then shallots. Cook for 3-4 min, stirring often, until softened.
  • Add crushed tomatoes and 1/3 cup (2/3 cup) water. Bring to simmer over medium-high, then reduce heat to medium-low. Cook for 10-12 min, stirring occasionally, until sauce is slightly thickened.

  • Drain and rinse shrimp, then pat dry with paper towels. Season with salt and pepper.
  • To the pan with sauce, add shrimp, then cover. Cook for 2 min, lifting the lid to stir occasionally.
  • Add spinach. Cover and cook for 1-2 min, lifting the lid to stir occasionally, until spinach is wilted and shrimp is firm and opaque.** Season with salt and pepper.

  • Divide veggies, shrimp and sauce between plates. 
  • Sprinkle Feta over top.
