Before starting, preheat the broiler to high. Wash and dry all produce. Trim, then halve snap peas. Trim, then cut green beans into 1-inch pieces. Thinly slice green onions. Zest, then juice half the lime. Cut remaining lime into wedges.
Heat a large non-stick pan over medium heat. When hot, add sesame seeds to the dry pan. Toast, stirring often, until golden-brown, 3-4 min. (TIP: Keep your eye on them so they don't burn!) Transfer sesame seeds to a plate.
Pat steaks dry with paper towels. Season with half the garlic salt and pepper. Heat the same pan over medium-high. When hot, add 1/2 tbsp oil (dbl for 4 ppl), then steaks. Sear until golden-brown,1-2 per side. Remove the pan from heat, then transfer steaks to an unlined baking sheet. Broil in the middle of the oven, flipping halfway through, until cooked to desired doneness, 5-8 min.**
While steaks broil, heat the same pan over medium-high. When hot, add 1/4 cup water (dbl for 4 ppl) then green beans and edamame. Cook, stirring occasionally, until green beans start to soften, 3-4 min. Add 1/2 tbsp oil (dbl for 4 ppl), then snap peas. Season with remaining garlic salt and pepper. Cook, stirring occasionally, until veggies are tender-crisp, 2-3 min. Remove the pan from heat, then sprinkle with lime zest. Transfer veggies to a plate and cover to keep warm.
Add soy sauce mirin blend, half the green onions and 1/2 tbsp lime juice (dbl for 4 ppl) to the same pan. Bring to a simmer over medium and cook, stirring occasionally, until sauce thickens slightly, 2-3 min.
When steaks are done, loosely cover with foil and set aside to rest, 2-3 min. Thinly slice steaks. Divide veggies between plates. Top with steaks, then drizzle sauce over top. Sprinkle with sesame seeds and remaining green onions. Squeeze over a lime wedge, if desired.
