Cooking Steps

  • Peel, then mince or grate garlic.
  • Roughly chop parsley.
  • Cut each flatbread into 6 wedges (24 wedges total).
  • Roughly chop spinach.
  • Heat a large non-stick pan over medium-high heat. When hot, add 1/2 tbsp oil, then spinach and half the garlic. Season with salt and pepper, then cook, stirring often until spinach is wilted and garlic is fragrant, 2-3 min.
  • Transfer spinach to medium bowl and let cool.

  • Combine remaining garlic and 2 tbsp oil in a small bowl.
  • Arrange flatbread wedges on a two large parchment-lined baking sheets. Brush garlic oil all over flatbread wedges, then season with salt and pepper.
  • Bake in the top and middle of the oven until golden-brown and crisp, 5-6 min. (NOTE: Keep an eye on flatbread chips so they don't burn!)

  • Combine cream cheese, sour cream, mayo, half the cheese, half the parsley, 1/4 tsp salt and 1/4 tsp pepper together in another medium bowl.
  • When spinach is cool, use paper towels to squeeze out any excess water.
  • Add spinach to cream cheese mixture, then stir to combine.
  • Transfer dip mixture to a baking dish, then sprinkle remaining cheese over top.

  • Bake dip in the middle of the oven until warmed through, 5-6 min.
  • Sprinkle remaining parsley over dip. Serve garlicky flatbread chips on the side for dipping.
