Instructions

  • Core, then cut pear into 1/2-inch pieces.
  • Peel, core, then cut apples into 1/2-inch pieces.
  • Juice lemon.
  • Combine 1/2 cup flour, almonds, 1/4 cup packed brown sugar, 1/8 tsp salt and half the cinnamon in a medium bowl.

  • Melt 4 tbsp butter in a large non-stick pan over medium heat.
  • Once melted, add flour mixture. Cook, stirring constantly, until mixture is moistened and forms small clumps.
  • Reduce heat to medium-low. Cook, stirring frequently, until streusel is golden-brown and well-toasted, 6-8 min. (NOTE: Don't worry if streusel is soft; it will firm up as it cools.)
  • Transfer streusel to a plate.

  • Melt remaining 2 tbsp butter in the same pan over medium heat.
  • Once melted, add apples and pears. Cook, stirring occasionally, until apples start to soften, 3-4 min.
  • Meanwhile, whisk together 1/4 cup water and 1 tbsp flour in a small bowl.
  • Add water mixture, remaining brown sugar, 1 tbsp lemon juice, remaining cinnamon and 1/8 tsp salt to the pan with fruit, then stir to combine.
  • Reduce heat to medium-low. Cover and cook, stirring occasionally, until fruit has softened, 6-8 min.
  • Remove lid and continue to cook, stirring occasionally, until fruit is fork tender and mixture has thickened slightly, 1-2 min.

  • Divide fruit filling between small bowls.
  • Sprinkle toasted streusel over top. (TIP: (Remaining streusel can be kept in an airtight container in the fridge for up to 1 week. Use for a future creation or on top of yogurt!)
  • Serve immediately with your favourite ice cream on the side.
