Before starting, preheat the oven to 400˚F. Peel, core, then cut apple into 1/4-inch pieces. Heat a large non-stick pan over medium-high heat. When hot, add 2 tbsp butter, then apples. Cook, stirring often, until tender-crisp, 4-5 min. While apples cook, cut buns into 1-inch pieces.
Whisk together eggs, brown sugar, pumpkin pie spice, cream and 1/8 tsp salt in a large bowl. Add bun pieces and apples to mixture. Stir to coat until liquid is absorbed. Add mixture to a greased 8x8-inch baking dish. Bake in the middle of the oven until puffed and golden-brown, 35-38 min.
While apple french toast bakes, add bacon to a parchment-lined baking sheet. Bake in the bottom of the oven until crispy and cooked through, 12-15 min.**
Allow apple french toast bake to cool slightly before serving, 3-5 min. Serve with maple syrup and bacon on the side.
