Before starting, preheat the oven to 425ºF. Remove 3 tbsp butter from the fridge and set aside in a warm place to soften. Wash and dry all produce. Cut bagels into 1-inch pieces. Grease a 8x8-inch baking dish with 1 tbsp softened butter. Whisk together cream, eggs, cinnamon, 1/4 tsp salt and half the brown sugar in a large bowl. Add bagel pieces and sultanas, then stir to coat bread with liquid. Transfer bread mixture to the prepared baking dish.
Cover baking dish with foil and bake in the middle of the oven for 30 min. Carefully remove foil, then continue to bake until top is golden-brown, 10-15 min.Meanwhile, heat a large non-stick pan over medium-high heat. When hot, add pecans to the dry pan. Toast, stirring often, until golden-brown, 4-5 min. (TIP: Keep your eye on them so they don't burn!) Transfer to a plate.
