with Guacamole Crema and Pickled Shallots

Cooking Steps

  • Halve, peel, then cut shallot into 1/4-inch half-moons. 
  • Add vinegar, 1 tbsp water and 1 tsp sugar to a medium microwave-safe bowl. Season with salt, then stir to combine. Microwave in 15 sec increments, stirring between each, until sugar dissolves. (NOTE: This is your pickling liquid.) Add shallots, then set aside to pickle.

  • Meanwhile, roughly tear falafel into quarters.
  • In a large non-stick pan, heat 1 tbsp oil over medium-high.
  • When hot, add falafel pieces. Cook for 4-5 min, stirring occasionally, until golden. Season with salt and pepper.

  • Add guacamole and sour cream to a small bowl. Season with salt and pepper, then stir to combine.

  • Wrap tortillas in paper towels.
  • Microwave until tortillas are warm and flexible, 30 sec. (TIP:You can skip this step if you don't want to warm the tortillas!)
  • Divide tortillas between plates, then top with guacamole crema, spring mix, falafel pieces and pickled shallots.
  • Sprinkle feta over top.
