Before starting, preheat the oven to 425°F. Wash and dry all produce. Strip half the sage leaves from stems and roughly chop. Remove plastic from turkey roll, then pat turkey dry with paper towels. Place turkey roll in a 9x13-inch baking dish or roasting pan. (NOTE: DO NOT use a glass or pyrex dish to roast the turkey!) Sprinkle turkey with sage and season with pepper. Drizzle 1 tbsp oil over top.
Cover turkey with foil. Roast in the middle of the oven until golden-brown and cooked through, 2 hrs 30 min.**
When there is 20 min of cook time left, remove foil and add 1 cup water to the baking dish or roasting pan. Return to the oven and cook uncovered for the remaining 20 min.
When turkey is cooked through, carefully transfer to a cutting board. Cover with foil and let rest for 20 min. Reserve turkey juices in the baking dish to be used for Savoury Turkey Gravy. After 20 min, remove netting and carve turkey into 1/4-inch-thick slices. Transfer turkey to a serving platter.
