Instructions

Cook soba noodles and edamame

  • Add soba noodles to the boiling water. Cook uncovered, stirring occasionally, until tender, 8-9 min.
  • When the soba noodles have 5 min cook time remaining, add edamame to the pot.
  • Drain, then rinse soba noodles and edamame under cold water.
Prep and make ginger scallion sauce

  • Juice lime.
  • Peel, then mince or grate 1 tbsp ginger.
  • Thinly slice green onion.
  • Peel, then mince or grate garlic.
  • Roughly chop cilantro.
  • Combine, soy sauce, sesame oil, garlic, green onions, 2 tsp lime juice, rice vinegar, grated ginger and 2 tsp sugar in a large bowl. Season with salt and pepper, then whisk until sugar dissolves. Set aside.
Toast sesame seeds

  • Heat a small non-stick pan over medium-high heat. When hot add sesame seeds to the dry pan. Toast, stirring, until golden, 3-4 min. (TIP: Keep your eye on them so they don't burn!) Transfer to a plate.
Finish and serve

  • Add soba noodles and edamame, carrots and half the cilantro to the large bowl with dressing, then toss to combine.
  • Divide sesame soba noodles between bowls or plates, then sprinkle toasted sesame seeds, crispy shallots and remaining cilantro over top. (TIP: Let sesame soba noodle salad sit in the fridge for 2-3 hours or overnight to develop extra flavour!)
