Cooking Steps

  • Before starting, preheat the oven to 450°F.
    Wash and dry all produce.
  • Remove any brown spots from potatoes and cut into 1/2-inch wedges.
  • To a parchment-lined baking sheet, add potatoes, hald the BBQ Seasoning and 1 tbsp oil. (NOTE: For 4 servings, use 2 baking sheets, with 1 tbsp oil per sheet.) Season with salt and pepper, then toss to coat.

  • Roast potatoes in the middle of the oven for 25-28 min, flipping halfway through, until tender and golden. (NOTE: For 4 servings, roast in the middle and bottom of the oven, rotating sheets halfway through.)

  • Meanwhile, thinly slice mushroooms. 
  • Peel, then mince or grate garlic. 
  • Peel, then cut shallot into 1/4-inch slices.
  • Thinly slice chives.
  • Cut bacon into 1/2-inch pieces. 
  • Heat a large non-stick pan over medium-high heat, then add 1 tbsp (2 tbsp) oil. 
  • Crack in two (four) eggs. Season with salt and pepper. Pan-fry, covered, until egg whites are set, 2-3 min. (NOTE: The yolk will still be runny!)
  • Transfer to a plate, cover to keep warm.

  • Pat steaks dry with paper towels. Season with remaining BBQ Seasoning, salt and pepper. 
  • Add 1/2 tbsp (1 tbsp) oil to the same pan, then steaks. Cook 1-2 per side, until browned.
  •  Remove from heat and transfer steaks to an unlined baking sheet.
  • Roast in the top of the oven 5-8 min or until cooked to desired doneness.**
  • When steaks are done, remove from heat and transfer to a plate. Loosely cover with foil and set aside to rest for 2-3 min.

  • Meanwhile, bacon to the same pan. (NOTE: For 4 servings, cook bacon in batches.) Cook for 5-8 min, flipping occasionally, until crispy.** 
  • Remove all but 1 tbsp (2 tbsp) bacon fat from the pan, then add mushrooms.
  • Cook 2-3 min, stirring occasionally, until softened. 
  • Add Gravy Spice Blend, shallots and garlic. Cook 1-2 min, stirring often, until fragrant. Season with salt and pepper. 
  • Add 1/2 cup (1 cup) water, 6 tbsp (12 tbsp) maple syrup and broth concentrate. Cook 3-4 min, until slightly thickened. 
  • Remove the pan from heat.

  • Divide potatoes and steak between plates.
  • Top steak with maple bacon gravy, then the sunnyside egg. 
  • Sprinikle over chives, then drizzle over as much maple as desired.
