Sweet Chili Pork Banh Mi Sandwiches

with Marinated Veggies and Spicy Mayo

These sweet chili pork banh mi sandwiches take a twist on traditional flavours while still packing a seriously delicious punch. Filled juicy seared pork, spicy mayo and plenty of fresh herbs and pickled veggies for the ultimate flavour bomb in every bite.

Cooking Steps

  • Thinly slice cucumber. 
  • Roughly chop cilantro.
  • Pick mint leaves from stem, then roughly chop.
  • Add vinegar and a pinch of salt to a medium bowl, then stir to combine. Add carrots, cucumber, mint and cilantro, then toss to combine. Set aside.

  • Pat pork dry with paper towels.
  • In a large bowl, combine cornstarch, 1/4 tsp salt and 1/4 tsp pepper.
  • Add pork, then toss to coat.

  • Heat a large non-stick pan, over medium-high heat. When hot, add 1 tbsp oil. 
  • When the pan is hot, add pork. Pan-fry pork for 4-6 min per side, until dark golden-brown and cooked through.** (NOTE: If pork is browning too quickly, reduce heat to medium.)
  • Transfer pork to a clean cutting board, then rest for 5 min.
  • Thinly slice pork, then return to pan. Add sweet chili sauce, then toss in pan juices to coat.

  • Halve sandwich buns.
  • On an unlined baking sheet, arrange buns, cut-side up.
  • Toast on the middle rack of the oven for 2-4 min, until golden-brown. (TIP: Keep your eye on them so they don't burn!)
  • Spread regular mayonnaise over cut sides of buns. Stack pork,  and marinated veggies on bottom buns.
  • Drizzle spicy mayo over top, if desired. 
  • Close with top buns.
