Cooking Steps

  • Before starting, preheat the oven to 425F.
  • Arrange bacon on a parchment-lined baking sheet. 
  • Peel, core, then cut apple into 1/4-inch pieces. To a medium bowl, add apples and cinnamon, then toss to combine.
  • Melt 2 tbsp butter in the microwave.
  • Brush the base and sides of another large rimmed baking sheet with melted butter.
  • To a large bowl, add Breakfast Baking Mix. Add 2 cups water and 2 tbsp maple syrup, then whisk to combine.

  • Scrape pancake batter into prepared pan, then spread into an even layer using the back of a spoon or spatula. 
  • Scatter apples and pecans over batter. Bake in the middle of the oven for 16-20 min until golden.
  • Meanwhile, roast bacon in the bottom of the oven for 12-15 min, until crisp and cooked through.**

  • To another large, bowl, add cream and brown sugar. 
  • Whisk using an electric hand mixer for 2-3 min, until stiff peaks form.
  • Set aside in the fridge until ready to serve.

  • Remove sheet pan pancake from the oven and transfer to a wire rack to cool slightly.
  • Transfer bacon to a paper-towel lined plate.
  • Cut pancakes into 8 large pieces, then divide between plates. Dollop brown sugar whipped cream over top. 
  • Divide bacon between plates.
  • Drizzle remaining maple syrup over top.
