Cooking Steps

  • Core, then cut pepper into 1/4-inch pieces.

  • To the boiling water, add orzo. Cook for 10-12 min, uncovered, stirring occasionally, until tender.
  • Reserve 1/4 cup (1/2 cup) pasta water, then drain and return orzo to the same pot, off heat.

  • Meanwhile, heat a large non-stick pan over medium-high heat.
  • While the pan heats, drain and rinse shrimp, then pat dry with paper towels. Season with 1/4 tsp (1/2 tsp) garlic salt and pepper.
  • When hot, add 1 tbsp (2 tbsp) oil, then peppers.
  • Cook for 2-3 min, stirring often, until softened.
  • Add garlic puree.
  • Cook for 1-2 min, stirring often, until garlic is fragrant.

  • Add peas, sun-dried tomato pesto, cream and shrimp to the pan. (DQ: WATER? we have 1/4 cup pasta water if needed)
  • Cook for 4-5 min, stirring occasionally, until sauce thickens slightly and shrimp is cooked through.
  • Season with 1/4 tsp (1/2 tsp) garlic salt and pepper.

  • To the pot with orzo, add shrimp sauce, then stir to combine.
  • Season with salt and pepper.
  • Divide creamy sun-dried tomato shrimp and orzo between bowls.
  • Sprinkle Parmesan over top.
