Cooking Steps

Prep
1

Before starting, remove pizza dough from the fridge and rest in a warm spot for 20 min. Preheat the oven to 475 °F. Drain, then thinly slice olives into 1/4-inch rounds. Peel, then mince or grate garlic. Halve cucumbers lengthwise, then cut crosswise into 1-inch spears. Lightly oil wooden skewers.

2

Lightly oil a clean work surface. On the work surface, divide dough in half. Use both hands to roll each piece of dough into a 24-inch-long rope. Cut each rope into three 8-inch-long pieces. (NOTE: Don’t worry if dough pieces shrink when you cut them.) Re-roll each piece of dough into a 12-inch-long rope. (NOTE: If dough springs back when rolled, let it rest for an additional 5 min before continuing.) Working with 1 skewer at a time, starting from the base of the skewer, twist 1 dough rope around the skewer until the entire skeweris covered. Repeat with remaining dough ropes and skewers. Arrange prepared skewers on a parchment-lined baking sheet, 2 inches apart.

Place 2 olive slices side by side at one end of each skewer to form ‘eyes’, pressing to adhere. Bake on the middle rack of the oven until lightly golden-brown, 10-12 min.

Add 1/4 tsp garlic and 2 tbsp butter to microwave-safe bowl. Season with salt and pepper, then stir to combine. Microwave until butter melts. Transfer marinara sauce to a small bowl. When earthworm rolls are done, brush with garlic butter, then sprinkle Parmesan over top. Cool on a wire rack for 10 min. Carefully remove wooden skewers from earthworms, then transfer to a plate. Divide earthworm rolls and cucumbers between plates. Serve marinara sauce and ranch dressing on the side for dipping
