Portuguese Chicken Recipe - Piri-piri Chicken

If you’re wanting to add a Portuguese twist to your roast chicken, you should try this Portuguese inspired piri-piri chicken recipe. Serve up with some delicious fries, salad or potatoes for a hearty meal the entire family will enjoy.
Prepare the Piri-Piri Marinade:
  • In a blender or food processor, combine the bird’s eye chilies, garlic, red bell pepper, olive oil, white vinegar (or lemon juice), smoked paprika, oregano, cumin, salt, black pepper, and brown sugar (if using).
  • Blend until smooth, making sure all ingredients are well incorporated.
Marinate the Chicken:
  • Place the chicken in a large resealable plastic bag or a shallow dish.
  • Pour the Piri-Piri marinade over the chicken, ensuring it is well-coated.
  • Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight, to allow the flavours to penetrate the meat.
Cook the Chicken:
  • Preheat your grill to medium-high heat. If using an oven, preheat to 400°F.
  • Remove the chicken from the marinade and shake off any excess. -Season with a little extra salt and pepper.
Grilling Method:
  • Place the chicken skin-side down on the grill. Cook for about 10-15 minutes per side, or until the chicken is cooked through and the skin is crispy and charred in places.
  • Use a meat thermometer to check that the internal temperature reaches 165°F.
Oven Method:
  • Place the chicken on a baking sheet lined with foil or parchment paper.
  • Roast in the preheated oven for 45-60 minutes, or until the chicken is cooked through and the skin is golden and crispy.
