Heat a medium pot over medium heat. When hot, add 2 tbsp butter and swirl the pot to melt. When butter is melted, sprinkle flour over top. Cook, whisking often, until mixture is golden-brown and fragrant, 2-3 min.
Add reserved turkey juices, demi-glace, 1 1/2 cups water and 1/2 tsp salt to the pot with butter mixture. Simmer, whisking often, until gravy reduces slightly, 2-3 min.
When ready to serve, transfer gravy to a gravy boat.
