Instructions

  • Peel, then cut potatoes into 1/2-inch pieces. 
  • Core, then cut apple into 1/4-inch slices.
  • Thinly slice green onion.
  • On a separate cutting board, cut bacon into 1/2-inch pieces.

  • Heat a large pot over medium-high heat.
  • When hot, add 1/2 tbsp oil (dbl for 4 ppl), then bacon. Cook, stirring often, until golden-brown, 3-5 min.
  • Remove from heat. Carefully drain and discard excess fat, reserving 1 1/2 tbsp (dbl for 4 ppl) in the pot.

  • Add leeks to the pot with bacon. Cook, stirring often, until leeks soften, 1-2 min.
  • Add flour. Cook, stirring constantly, until fragrant, 30 sec.
  • Add potatoes, stock powder and 2 cups water (dbl for 4 ppl). Season with salt and pepper, then stir to combine.
  • Bring to a boil over high heat.

  • Once boiling, cover and reduce heat to medium. Cook, stirring occasionally, until potatoes are tender, 12-14 min. (TIP: If you want a thicker consistency, cook the chowder a few minutes longer.)
  • Add cream and half the cheddar cheese. Cook, stirring often, until warmed through, 1-2 min.

  • When chowder is almost done, add apples, spring mix and plant-based Bacon-Ranch dressing to a large bowl. Toss to combine.

  • Divide chowder between bowls.
  • Sprinkle green onions and remaining cheddar cheese over top.
  • Serve salad alongside.
